From there, step into the Old Town for a pintxo crawl led by a local guide. These bite-sized creations are not just snacks — they’re cultural shorthand for the city’s approach to eating: informal, ingredient-led, and deeply social. Thanks to its unique geography, the Basque Country sits at the crossroads of several remarkable wine regions. You’ll taste your way through structured Rioja reds, bright Atlantic whites from the txakoli appellation, and lesser-known French Basque wines, often aged in creative ways — including underwater cellars designed to mimic ancient maritime trade.
In the hills outside the city, a visit to a traditional sagardotegi (cider house) offers a more rustic take on local drink culture. Here, cider is poured directly from the barrel, meals are served communally, and the menu rarely changes: cod omelet, grilled steak, local cheese, walnuts, and quince paste. Tart, dry, and unmistakably Basque, the cider reflects the landscape — bold, earthy, and alive.

Wander through boutiques, stop for coffee on the main square, or visit a local craftsman who makes knives with cryogenically treated steel. Other options include a tasting at a pét-nat brewery specializing in herbal, low-alcohol fermentations — a new take on an ancient tradition.
It’s an easy day trip, but the shift in architecture, language, and flavor makes it feel like a world away.
